Paw Paw and coriander salsa
Use this salsa under or on top of pan-fried fish. I have used this salsa with many different types of foods, but I have found that seafood, especially fish complement this salsa best. Take a piece of your favorite fish, pan-fry and place some of this paw paw salsa on top. Finish the cooking process under the grill or in the oven. You may find that you will not need a sauce with the fish if you use this salsa.
Peel the paw paw and take out all of the seeds. Slice the paw paw into small wedges. Out of the wedges, slice into thin strips and dice the strips so you have fine diced paw paw. Place into a bowl. Take the onion and garlic and cut into fine dice. Add to the paw paw. Cut the tomato into quarters and take all the seeds out. Cut the tomato into fine dice. Add to the paw paw. Finely chop the coriander and lime leaves and add to the paw paw. Mix the paw paw and other ingredients in the bowl and add the lemon and limejuice, sugar and orange blossom water. Place the paw paw salsa into the refrigerator and use within 48 hours.
1 half of a medium paw paw
1 red onion
1 small hard tomato
1 cup coriander
½ clove of garlic
2 lime leaves
1 teaspoon lemon juice
1 teaspoon lime juice
1 teaspoon sugar
1 teaspoon orange blossom water
