Kids love this apricot bar recipe. They keep well in plastic containers and are great for school lunches. I often make these apricot bars for my daughter. She loves them. Make a note of how little if costs to make this recipe and have a look at how much a similar product at the supermarket is.

Combine the butter and the golden syrup in a small saucepan. Place the saucepan over a low heat and heat till the butter melts. Combine the flour, muesli, sugar, apricots, sultanas, rolled oats, and coconut together in a medium size bowl. Lightly beat the eggs with a fork and add into the dry ingredients. Add the cooled butter and syrup. Mix all the ingredients together. Make small logs and place them onto a well-greased baking tray. Bake the apricot bars in an oven on 365F for 20 minutes. Cool the apricot bars down after baking on a wire cooling rack. Store in airtight plastic containers.

6 ½ ounces butter

2 tablespoons golden syrup

¼ cup bakers flour

¼ teaspoon baking powder

½ muesli

½ cup brown sugar

½ cup chopped dried apricots

3 tablespoons sultanas

¼ cup rolled oats

¼ cup shredded coconut

2 eggs

 

Time to make 30 minutes makes approx. 25 bars
