Potato and bacon pie
I think that you will agree everybody loves pie. This potato pie recipe comes from a little bakery in Brisbane, Australia. If anyone knows how to make a great pie, it’s those dam Aussies. I had gathered many pie recipes and placed them into my recipe portfolio, but this one really stood out in flavor.
Combine the flour and the salt in a small stainless steel bowl. Add the firm butter t o the flour and combine with your fingertips. Add the ice water and mix until the dough comes together. The butter does not have to be fully mixed into the pie dough. Leave the pie dough to rest in the refrigerator for at least 2 hours before using.
Boil the potatoes in a small pot of water till they are soft throughout. Take out of the water and mash with the cream, butter and salt and pepper. Leave aside. Cut the bacon rashes into small strips and leave aside. Slice the onion into thin slices with the garlic and add to a heated frying pan with the vegetable oil. Fry the onion till brown and add the chopped bacon. Fry the bacon for 2 minutes then add the rich gravy and water into the pan and simmer for 30 minutes until the gravy mix becomes thick and reduced. Roll the pie dough out to your disired thickness and place into your pie mould. Add some of the bacon pie mix into the pie mould until the pie is ¾ filled to the top. Place the warm mashed potato into a piping bag and with a star nozzle, pipe the mashed potato on top of the pie in a circular formation. Bake the pies in a per-heated oven sat at 390F for 12 to 14 minutes or until the pie pastry is golden brown and fully cooked.

1 pound bread flour
2 teaspoons salt
12 ounces butter
3 ounces cold water, approx.
Pie filling
8 Bacon rashes
1 medium brown onion
4 cups rich gravy mix in water.
½ clove fresh garlic
2 potatoes
1 teaspoon butter
1 teaspoon cream
Salt and pepper
1 tablespoon vegetable oil
