Meatloaf with baked egg inside

My mother used to make this meatloaf recipe regularly. When I was younger, I used to love eating meatloaf. I am not such a fan of meatloaf now. I think mum cooked it up one two many times.

Place the ground beef into a stainless steel bowl. Add the bar-b-q sauce, paprika and 9 of the eggs. Mix these ingredients well. Chop the onions, spring onions and capsicum and add to the beef and mix well. Slice the bacon into strips and fold through the beef mix.

Grease a bread tin with butter and place some of the meatloaf mix to half fills the tin. Make a small well in the beef mix and crack the last egg into the well. Place the meatloaf mix over the top of the egg until the mix is nearly to the top of the bread tin. Cover the bread tin with foil and bake the meatloaf on 360F for 45 minutes. Take the meatloaf out of the oven and place in the refrigerator for 20 minutes until fully cooled. Take the meatloaf out of the bread tin and slice into desired pieces. Warm the meat loaf in a nice packed gravy mix and serve.

4 pounds ground beef

10 eggs

6 ounces bakers

¼ cup bar-b-q sauce

1 teaspoon ground paprika

4 rashes bacon

½ cup chopped spring onions

2 brown onions

½ chopped red capsicum
