French style meat loaf
Meat loaf is a very popular dish world wide. This recipe came for somewhere in France. I worked with a French chef once, who thought he was the best cook in the whole world. He also thinks his meat loaf recipe is the best. You be the juge of that after you make the meat loaf.
Place the lean beef mince into a medium size stainless steel cooking bowl. Finely dice the onion and the garlic and add the onion and the garlic into the bowl with the lean beef mince. Add the peppercorns, chopped thyme, ground cloves and the red wine and mix well with a wooden spoon. Crack the eggs into the bowl and mix the eggs into the beef mix. If the skewer comes out of the meatloaf dry, your meatloaf is now ready to eat.
Serve some roast meat gravy or beef jus with your meatloaf to add some moisture to the dish.
2 pounds lean beef mince
1 small onion
1 clove of garlic
1 teaspoon pink or greed peppercorns
1 teaspoon chopped thyme
¼ teaspoon ground cloves
6 ounces strong red wine
2 whole eggs
2 egg yokes
Pinch sea salt
