Pesto Cajun fillet of Beef with green salad and crusty bread roll
Men. You will love this one. Loose that gut and enjoy your meal at the same time. This beef dish is packed with protein and at the same time tastes good, and is good for you.
Blend the tomato paste, Cajun seasoning and pesto paste in a small bowl. Set aside until you are ready to cook your meat. Make your green salad now by slicing up the asparagus, snow peas, avocado and capsicum, and add the sprouts and lettuce. Set aside. Brush marinade paste on both sides of your beef and place onto a hot grill. Cook the beef for 2 to 3 minutes on one side then turn over and cook for a further 2 to 3 minutes on a medium heat. Take the fillet of beef off the heat and let it rest for 2 minutes then serve with the fresh green salad and a hot crusty bread roll. Pick up a crusty bread roll from your favorite bakery. Try and buy a multi grain or brown crusty bread roll.
2-x 8 ounce Beef fillets
1 medium brown onion
1 clove of garlic, chopped finely
1 tablespoon of olive oil
Marinade
1 tablespoon tomato paste
3 teaspoons of Cajun seasoning powder
2 teaspoons of pesto paste
Helpful hand – You can buy Cajun seasoning and pesto paste from your local deli or supermarket.
Green salad
Washed lettuce leaves
6 Blanched asparagus spears
6 blanched snow peas
½ avocado
¼ cup of alfalfa sprouts
¼ green capsicum
