Low fat guacamole
If you love avocados, you will really like this guacamole recipe. Instead of dipping corn chips into the guacamole, try toasting some Turkish bread and spread a small amount of guacamole over the top. This is a great snack or starter for lunch, morning or afternoon tea.
Steam or microwave the broccoli until soft, between 2 to 5 minutes. Do not over cook the broccoli or you will loose the bright green color. Cool down the broccoli in iced water and drain. Puree the broccoli with the natural yoghurt, lemon juice and avocado. Take out of the food processor and into a stainless steel bowl. Add the chopped onion, teaspoon of cummin, chopped clove of garlic, sweet chilli sauce, low fat cottage cheese and seeded and diced tomato. You’re guacamole in now ready to be served with vegetable sticks, corn chips or toasted Turkish bread
1 cup broccoli florets
½ small red onion
1 garlic clove, diced fine
¼ teaspoon cummin
2 tablespoons sweet chilli sauce
½ teaspoon lemon juice
3 ounces low fat natural yoghurt
3 ounces low fat cottage cheese
½ small ripe avocado
1 small tomato, seeded and diced
