Seared peppered tuna on cottage cheese, cauliflower and chive puree
The flavor of the pepper through the tuna really makes this dish. If you are not a pepper lover, use dukkah instead of pepper. Dukkah will add a great mellow flavor without the bite that peppers will give. This is another great low carb meal.
Heat a heavy bottom frying pan and add the olive oil. Trim the tuna and roll in the cracked pepper coating the tuna well and place into the hot frying pan, turning the tuna over a number of times until 1/3 cooked. Take the tuna out of the pan and place onto a piece of cling wrap. Roll the tuna tightly, forming a round log and cool the tuna down in the refrigerator. In a small pot, boil the cauliflower until soft, drain and place into a food processor. Add the cottage cheese and chopped chives. Blend quickly until all the ingredients are mixed together. Take a dinner plate and place the warm cauliflower puree into the center of the plate. Take the cling wrap off the tuna and slice into thin circles. Place 5 thin circles over the cauliflower puree. In a small bowl, mix the sugar into the vinegar until the sugar dissolves. Sprinkle the vinegar around the plate and over the tuna.

1 tablespoon olive oil
¼ cup cottage cheese
½ cup cauliflower
1 tablespoon chopped chives
1 tablespoon red wine vinegar
1 teaspoon sugar
