The spices used in Japanese cooking may have been enough to protect people from sickness in the past, but not now.
Japanese cooking is not particular food any more. Many kinds of western cooking are eaten in Japan on a daily basis and arrange them to our taste. People in the world use Japanese ingredients to their daily dishes, too. It is good to make exactly the same as recipes. But it is also good if you introduce their idea to your dishes. Because the Japanese cooking uses less meat and low in fat ingredients, it is known very healthful.
The Japanese cuisine offers a very large variety of dishes and regional specialties. You will find information about some of the popular dishes and Japanese table manners, as well as some illustrated recipes.

Gyoza - Japanese style dumplings Gyoza is originally a Chinese dish that has also become very popular in Japan. This recipe shows all the steps of how to make the dough and the filling. You may prefer to use premade pieces of dough (or even completely premade deep frozen gyoza).
Korokke - Japanese Croquettes
Korokke is not an original Japanese dish. There are many different kinds of korokke today, varying in their fillings. The recipe below introduces you two of the most popular kinds of korokke: white cream korokke and meat potatoe korokke.
Yakitori - Grilled chicken
Yakitori is grilled chicken speared on sticks. All different parts of the chicken, thighs, skin, liver, etc. can be used for yakitori. The following recipe shows one of the most popular kinds, which is prepared with chicken thighs and leek. Yakitori is popular among salary men when they go out together after work. It is especially delicious with some hot sake.
Tempura - Deep-fried seafood and vegetables
The Potuguese brought tempura to Japan. Today Tempura is a very popular Japanese food, and as well one of the best known outside of Japan.
There are a few different ways to serve Tempura. Here are two of them:
Serve the Tempura pieces on a plate, and prepare some bowls with Tempura dipping sauce.
Tendon (Tempura Donburi): Put the pieces in Tempura dipping sauce, remove them, and put them on top of cooked rice in a bowl. (One bowl per person)
Udon are thick Japanese noodles. There are several ways to prepare Udon.
Kitsune Udon: Fox Udon Tanuki Udon: Japanese racoon Udon Tsukimi Udon: "Viewing moon" Udon (the yolk of an egg represents the moon)
Noodle eating directions: Keep the distance between your mouth and the bowl quite small, and lead the noodles with the chopsticks step by step into your mouth producing sipping noises.
