Baklava
Whether you are Greek or not, this traditional Baklava Greek dessert is delicious and loved and consumed by millions from all around the world.
Place all the nuts into a food processor and grind finely. Mix in the cinnamon and cloves and half the zest. Set aside. Place the water, honey, orange juice and remainder zest in a heavy bottom pan and bring to the boil. Add 1/3 of the syrup to the nut mix. Unroll the filo pastry and keep covered with a damp cloth. Place a sheet of baking paper on the work surface and begin by placing sheet by sheet of filo on top of each other, buttering between each layer until you have 6 layers of pastry. Add the nut mixture thinly onto the filo covering the entire surface. Gently roll the filo away from yourself tightly until you baklava is in a tight roll, like a pinwheel shape. Place the baklava roll onto a well-greased baking tray and cover the roll with the remainder of the syrup. Bake the baklava in an oven at 325 oF for approx. 45 minutes or till golden brown. Take out of oven, allow cooling and slicing to disired thickness.

4 ounces brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground cloves
Zest of two oranges
¾ cup water
½ cup honey
½ cup of orange juice
7 ounces of sugar
12 sheets of filo dough
8 ounces of melted butter
