Melon mint cooler
One of my favorites all time summer drinks. This melon mint cooler drink may take some time to prepare, but I am sure you will be as happy with the outcome as I always am.
Peel the outer skin off the rockmelon, watermelon, cantaloupe, pineapple and dice up into fairly small cubes and place into a plastic dish. Mix the seeded passionfruit, mint, simple syrup and cointreau in a small bowl and poor over the diced fruit. Let the liquid marinate over the fruit for at least 1 hr in a cold fridge. After the fruit has been marinating for at least 1 hour, strain the liquid into a plastic jug. Place the marinated fruits into a blender and pulse of around 1 to 2 mins. Then add the strained liquid, white rum and ice cubes. Pulse again for around 2 to 3 mins. The ice should be completely crushed and your drink thick with ice.
Simple syrup
1 ounce of boiling water
1 ounce of castor sugar
Boil water and add the sugar, stirring until the sugar is dissolved. Cool down in a cold re- fridgerator.
4 ounces of white rum
1 ounce of cointreau
2 ounces rock melon
2 ounces cantaloupe
2 ounces watermelon
1 ounce pineapple
8 sprigs of mint
1 seeded passionfruit
2 ounces of simple syrup
20 ice cubes
Time to make 1hr Serves 4 cocktails
