Fried rice
I was taught this recipe of fried rice by an Indian executive chef in a five star hotel I once worked at. I still use this recipe every time I cook fried rice. My mother also makes great fried rice. She thinks her recipe is better than mine. Try this recipe and see if you like it.
Heat a large frying pan and add the vegetable oil. Add the onion, garlic, capsicum, spring onions, green peas and corn kernels and fry well. Take the vegetables out of the pan. Heat the pan back up and scramble the eggs till soft. Add the vegetables and the soy sauce. Add the cooked rice and coriander. Mix all these ingredients and serve. Be careful that you don’t over cook the rice or you will end up with a great big thick mess.
I like to add thin marinated honey soy chicken strips over the top of my rice for a little something extra.
¼ cup onion, diced fine
¼ cup green capsicum, diced fine
¼ cup red capsicum
1 tablespoon spring onions
¼ cup green peas
¼ cup corn kernels
1 clove garlic, diced
6 cups of boiled and washed white long grain rice
4 eggs
2 tablespoons vegetable oil
Cracked black pepper
¼ cup of soy sauce
1-teaspoon coriander chopped
Time to make 20 mins Serves 4
