Chili pork curry
I added this chili pork curry recipe because of how different it was to all my other recipes. I have never heard of a chili pork curry before this recipe came to my attention.
Heat the oil in a deep frying pan and fry the pork dice until the pork is golden brown. Deep-fry the potato’ until they become brown and crispy. Blend all the spices, onion, garlic, tamarind, vinegar and chili in a food processor until you have a smooth paste. Heat a large frying pan and add 1 tablespoon of vegetable oil, cinnamon and cloves. Fry off for 1 minute and add the rest of the paste. Fry for 5 minutes adding a small amount of water to prevent the paste from burning. Add the sugar, boiling water, pork and seasoning and simmer for about 10 minutes or until the pork is fully cooked. Add the potatoes and pork just before serving. If you like a nice bite to your curry, add another couple of chopped chilies just before serving.
8 tablespoons vegetable oil
3 pounds of lean trimmed pork dice
2 large potatoes cut into small cubes
1 teaspoon cummin powder
1/ 2teaspoon cracked pepper
3 medium onions
1 teaspoon turmeric powder
6 cloves garlic
2 teaspoons chopped ginger
½ teaspoon cloves
5 medium green chilies
½ cup white vinegar
2 tablespoons tamarind
1 cinnamon stick
1 teaspoon cardoman
¼ cup sugar
3 cup boiling water
1 teaspoon salt
½ cup of port
