Red beef chili curry

I came across this beef curry recipe when I was looking through my mothers recipes. With a few modifications, I have created the perfect hearty beef curry. With your chili beef curry, wash some long grain rice and cook in a small saucepan of water for 5 to 6 minutes. Place the rice in a serving bowl and spoon the chili beef curry on top.

Heat the vegetable oil and fry off the garlic and onion. Add all the spices and chili and fry for a further 2 minutes. Add the vinegar and water and fry well. Add the tomato paste and simmer for 5 minutes. The sauce will separate. Add the diced beef, sugar, boiling water and seasoning, and simmer for 20 minutes. After 10 minutes add the potatos and finish simmering for another 10 minutes. If you like your curry really hot, add some more chopped chili.

2 tablespoons vegetable oil

2 large washed potatos

2 brown onions, sliced

5 cloves garlic, chopped

1 large red chili, chopped

1 teaspoon curry powder

1 teaspoon ground cummin

1 teaspoon turmeric powder

1 teaspoon ginger powder

1 teaspoon hot paprika

4 tablespoon red wine vinegar

2 tablespoons tomato paste

2 pound, 3 ounces diced beef

1 tablespoon sugar

4 cups boiling water

Seasoning

Time to make 1 hr Serves 6
