Champagne poached chicken and avocado salad
This chicken salad is a great all year round dish. You can serve this dish as a casual lunch, or as a formal dinner. The flavor of the champagne through the chicken is unbelievable. Try this chicken salad. You won’t be disappointed.
Slice your capsicum, spring onion, red onion and avocado and place into a medium bowl. Mix in your washed lettuce. Make your dressing by mixing the seeded mustard and lemon juice into the mayonnaise. Add dressing into the salad mix.
Add the champagne into a small pot or saucepan and heat to a simmer. Slice the chicken breasts into 3 pieces and add to the simmering champagne. Cook for approx. 5 minutes.
Mix the salad once more and place onto your serving plate. Over the to of the salad place the chicken in a tripod shape. Over the top of the salad crack some black pepper and sprinkle sea salt.
2 medium size breasts of chicken
3 cups of champagne
1 medium avocado
¼ of a red capsicum
¼ of a red onion
1 stalk of spring onion
1 cup of mixed lettuce
Pinch of sea salt and cracked pepper
Salad dressing
¼ cup of mayonnaise
1 teaspoon of seeded mustard
1 teaspoon of lemon juice
