Shrimp Scampi Recipe

 

Shrimp is a small slender-bodied chiefly marine decapods crustacean with a long tail and single pair of pincers; many species are edible.

 

Shrimp scampi is a favorite dish for special occasions aboard the USS John F. Kennedy. The aircraft carrier's recipe combines shrimp with garlic, loads of butter and fresh diced tomatoes. The dish is topped with breadcrumbs and baked in the oven.

 

The mess specialist scaled downs the ship's recipe, which feeds 5,000, to this version, which serves four. The downsized version called for more than a pound of butter, but the amount has been reduced to 4 tablespoons here. Serve over white rice with a green salad on the side.

 

Thanksgiving and Christmas we serve the traditional meals, and on New Year's Eve we'll do a fun appetizer menu. Then, on New Year's Day we'll serve porterhouse steaks and shrimp cocktail."

Mother's Day, Father's Day and St. Patrick's Day also are given special attention. Favorite special-occasion menus include "surf and turf" and shrimp scampi.

This elegant salad is perfect for company, or just to treat you after a long week. Curried Shrimp Salad can be 'stretched' by adding some cooked and drained pasta, but it's very decadent just to eat a lot of shrimp! Hot and cheesy Cheese Burst Biscuits are the perfect accompaniment. And for dessert, Best Pecan Pie is perfect.

 

I love shrimp, and I especially love shrimp when it's flavored with dill, as in Shrimp and Rice Salad. You can use any fresh vegetable in this recipe (baby peas would be good); pair it with some fresh fruit, crusty French bread and Simple Chocolate Cake for dessert.

It all started way back in 1959 when our founder Roger Meadmore set out on a driving trip from New York to Miami. He and his comrades kept pulling in to Howard Johnson’s wayside restaurants to eat pancakes.

 

The idea struck them that these pancakes would be a great idea for Australia. If you’ve ever been to America, you’ll know that Americans are the world’s biggest pancake eaters and will eat them with just about anything, much the same way as Australians eat toast.

 

On returning to Australia, Mr Meadmore soon found out why this pancake-eating obsession had not hit our shores. There was a difference in the way our wheat germinated, therefore producing different flour. So, for the first 10 years of operation, they imported the original Aunt Jemima mix from America until a local company could supply the strain needed to make those American style pancakes.

 

The first pancakes only restaurant was opened in Gilbert Place, Adelaide in 1965 called "The Pancake Kitchen". It was a small, cozy and very popular restaurant with a distinct Australian atmosphere. The operation proved to be a success and soon after, The Pancake Kitchen was opened in Melbourne and the partnership divided up amicably. The two companies shared ideas and the famous "Lovely!" lady symbol.

 

On 17th August 1975, Mr Meadmore opened the first pancakes restaurant in Sydney, Pancakes On The Rocks. He sold The Pancake Kitchen in Adelaide to two long-term employees and continued his venture in Sydney. Soon there were Pancakes restaurants all over Sydney, from Bondi Junction on the coast to Neutral Bay in the North and Parramatta in the west.

 

Over the years through changes of ownership and changing social environments, the original pancakes On The Rocks is still thriving. Through commitment to service and dedication to the old 'Pancakes' style, Pancakes On The Rocks will be an everlasting establishment to pancakes eaters from all over the world.
