Red wine marinated pepper steak on garlic mushrooms
This is a great dinner for one. This recipe requires a small amount of ingredients and is quick and easy to put together. I always like to make extra when cooking this dish. This will give me lunch the next day. I love to heat up yesterdays peppered steak and place it between two pieces of buttered fresh bread.
Place the red wine into a small container. Slice the paw paw and add it to the red wine. Flatten out your rib fillet steak with the back of your knife and marinate the steak in the red wine for at least 2 hours. After your steak has marinated for the appropriate time, take the steak out of the marinade and coat the steak in cracked pepper.
To make the garlic mushrooms, heat a frying pan. Chop the onion, garlic and mushrooms and add them into a hot frying pan with the olive oil. Fry until the mushrooms have turned brown. Add the white wine and reduce until the wine has ¾ reduced then add the thick cream and reduce until the cream becomes thick. Add the chopped chives just before serving.
Heat a frying pan and cook the peppered steak for 3 minutes on both sides. Place the steak on top of the garlic mushrooms.
